Carrot Based Vegan Veggie Burger

 

  • 2 large carrots
  • 400 g can mix beans
  • 1 onion
  • 3/4 tsp dried rosemary
  • 3/4 tsp dried thyme
  • 1/2 tsp ground cumin
  • 1/2 tsp curry powder
  • 1 tsp salt
  • 1/2 cup / 80 g whole wheat flour or oat flour
  • Olive oil

 

  1. Wash the carrots, I like to leave the peel on for extra fibre
  2. Grate the carrots with the big side grater.
  3. Add drained and rinsed beans, finely chopped onion and all the herbs and spices.
  4. Massage and mash, until the beans are crushed and all the ingredients are mixed.
  5. Add the flour and massage.
  6. Heat up the olive oil in a pan.
  7. Form the patties and cook on both sides until crispy.
